When we visited Iceland, it was on a tight budget. We stayed in hostels and at breakfast made sandwiches to eat at lunch. We didn't know that they don't like yo doing that until our last morning. We had the freshest fish at a restaurant called Sker I think on the Snaefellness Peninsula. It fell apart on the fork and melted in my mouth. The lamb I ate was so tender so I know what you are talking about. I loved Iceland. We had 6 days there.
