Last trip, I had all of my accommodation and transport booked and paid for before I left Australia. On my forthcoming trip, I have the first two weeks planned. I'm going to be travelling much slower so I figure I'll have time to book as I go. I try to stay away from top 10 too as I hate crowds and waiting in line.
